Fine pâté of rabbit liver and foie gras, caramelized beetroot, dried apricot gel, almond biscuits, and walnut praline
2. The Macallan Double Cask 12 Years Old
Tender quail, cauliflower cream, cauliflower fondant in almond milk, brown sauce, truffles
3. The Macallan Double Cask 15 Years Old
Slow-cooked ostrich in red wine, baby carrots, roasted celeriac purée with vanilla
4. The Macallan A Night on Earth
“Chocolate umami” — delicate sponge, dark chocolate ganache, and caramelized white chocolate mousse
